Our Grilled Vegetable Pizza is a celebration of farm fresh flavors! Grilled veggies are paired with melted Chihuahua® Cheese for a sensational pizza that will satisfy the whole family.
Ingredients
- 1½ cups brown mushrooms, ½-inch slice
- ¾ cup yellow squash, ½-inch half-moon slice
- ¾ cup zucchini, ½-inch slice half-moon slice
- ¾ cup red bell pepper, thin 2-inch strips
- ⅓ cup red onion, thin ½-inch strips
- 2 Tbsp. olive oil, divided
- 1 tsp. Kosher salt
- ½ tsp. ground black pepper
- 1 (14-inch) par-baked pizza crust
- ¾ cup White Pizza Sauce ...see recipe
- 1 (7.07 oz.) pkg. Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®, divided
6 Steps to complete
- 1Preheat gas grill to 500°F or high heat.
- 2In a bowl; combine mushroom, squash, zucchini, onion, bell pepper, 1 tablespoon olive oil, salt, and pepper. Toss to combine.
- 3Preheat a grill basket or tray for 1 to 2 minutes with the lid closed. Add vegetable mixture and grill for 4 to 6 minutes, turning occasionally, or until vegetables are lightly charred.
- 4Brush edge of crust with ½ tablespoon oil. Evenly spread crust with White Pizza Sauce leaving ½-inch boarder. Top with 1¼ cup Chihuahua® Cheese. Add grilled vegetable mixture and sprinkle with remaining ½ cup cheese.
- 5Lightly brush grill with remaining ½ tablespoon oil. Grill pizza for 10 to 12 minutes with the lid closed, until cheese has melted. Rotate pizza 2 to 3 times during cooking to get an evenly browned crust.
- 6Serve Grilled Vegetable Pizza and enjoy!
