If you want an appetizer that is easy and quick to prepare, try making Kale and Black Bean Tostadas, quick to make and packed with layers upon layers of different flavors and textures.
Ingredients

3 Tbsp. fresh lime juice

2 Tbsp. + 1 tsp. fresh orange juice

2 Tbsp. extra virgin olive oil

¼ tsp. salt, kosher

¼ tsp. ground cumin

1 jalapeño, seeded, finely chopped

¼ Cup cilantro, chopped

1 Cup red onion, sliced into half moon

4 Cups (packed) kale, washed, thick ribs removed, roughly chopped

1 Cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
-
1 Cup cherry tomatoes, quartered

1 (14.5oz) bag tostada shells

1½ Cups refried black beans (see recipe), or 1-15 oz. can refried beans

½ Cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
3 Steps to complete

1In a medium bowl, make dressing by incorporating lime and orange juice, olive oil, salt, and cumin. Whisk to emulsify. Add jalapeño, cilantro, and red onion. Mix well.

2Toss chopped kale in a big bowl with dressing, place in the refrigerator for 30 minutes. After marinating time, add ½ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®, cherry tomatoes, and toss to make sure all ingredients are well combined.

3To assemble the tostadas, spread 3 Tbsp. of refried beans on a tostada, next mound approximately ¾ cup kale mixture. Sprinkle 1 Tbsp. cheese and top with 1 Tbsp. Supremo® Brand Mexican Sour Cream from V&V SUPREMO®. Enjoy!
