Kale Quesadillas are overflowing with the delicious flavors of melted Chihuahua cheese, Sierra Cotija cheese, and smoky chipotle kale. These quick quesadillas are spicy, nutritious, and satisfying.
Ingredients

1½ Tbsp cooking oil

½ cup white onion, small dice
-
2 large garlic cloves, minced
-
½ cup plum tomatoes, seeded, diced
-
1/8 tsp salt or to taste
-
½ tsp. ground cumin
-
1 bunch (3 oz.) kale, stems removed, washed and rough chopped (2 ½ cups)

½ Tbsp. canned chipotle sauce
-
1/8 tsp ground black pepper
-
3 Tbsp. Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
-
2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
-
½ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

8 Steps to complete

1Preheat a medium saucepan over medium heat for 1 minute. Add oil. Heat for 1 minute

2Add onion and sauté for 1 minute, add garlic and cook for 30 seconds. Add tomatoes, salt, cumin, mix and cook for 2 minutes, stirring occasionally.

3Add kale, chipotle sauce, black pepper, mix again and cook for 2 minutes.

4Meanwhile preheat a skillet or pan for 1 minute over medium-low heat. It’s important that the skillet temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts.

5Turn off the heat from the saucepan, Stir in Grated Sierra® Brand Cotija Cheese and set aside.

6Warm tortillas for 1 minute on one side. Flip tortillas and add ¼ cup Shredded Chihuahua® Quesadilla Cheese and 2 Tbsp. kale mixture.

7Fold tortillas in half, and cook for 2 minutes or until cheese melts, and quesadillas are golden brown. Flip occasionally with spatula so they don’t burn

8Serve quesadillas with Sour Cream and enjoy!
