Lobster Mac and Cheese combines the luxurious flavor of lobster and deliciously decadent Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®. This hearty and heart-warming baked pasta dish will put a little love in your life!
Ingredients
Pasta:

½ tsp . Kosher salt

1 Tbsp. olive oil

1 bay leaf

2 cup cavatappi pasta

1In a large pot; combine 6 cups water, salt, olive oil, and bay leaf. Bring to a boil and add pasta. Boil pasta, stirring occasionally, for 9 minutes or until al dente. Drain and set aside until needed. Discard bay leaf.

2Preheat a large cast iron skillet for 2 minutes over medium heat, add butter and cook for 30 seconds or until butter is melted. Add shallot, garlic, and sauté for 1 minute. Add lobster and sauté for 1 to 2 minutes or until lobster is opaque. Remove lobster from skillet and set aside until needed.

3In the same skillet; add Sour Cream, Chihuahua® Cheese, Oaxaca Cheese, and cook for 4 to 5 minutes, stirring constantly, or until cheese is melted. Stir in mustard, hot sauce, thyme, and cook for 30 seconds to 1 minute. Add pasta, lobster, and toss to coat.

4Top macaroni with ⅓ cup grated Sierra® Cotija Cheese, ⅓ cup Chihuahua® Cheese, and place skillet under broiler for 2 minutes, or until cheese is golden brown. Remove Lobster Mac & Cheese from oven and garnish with sprigs of fresh thyme. Serve and enjoy!
