Macaroni salad is a flavorful, traditional, festive dish. Perfect for parties!
Ingredients
- ½ lb. macaroni
- 2 bay leaves
- 1 tsp. olive oil
- 2 tsp. salt
- ¼ cup pickled jalapeños, minced (optional)
- ½ cup celery, diced
- ¾ cup red bell pepper, diced
- ¼ lb. ham, diced (about ¼ inch cut)
Dressing

- 1Cook pasta according to package directions, adding 2 bay leaves, 2 teaspoons of salt and olive oil to cooking water. Drain pasta and place on sheet pan to cool.
- 2In a bowl whisk the lime juice and ¾ teaspoon of salt. When the salt has dissolved, add the sour cream and continue mixing.
- 3Place macaroni in a large bowl. Add celery, red bell pepper, ham, and jalapeños. Mix well.
- 4Add sour cream dressing and mix again.
- 5Cover the bowl and chill for at least one hour, or overnight before serving. Enjoy!
