2 medium Yukon gold potatoes, peeled and cubed

3 cups cauliflower florets

2 cloves garlic, cut into quarters

½ Tbsp.+1 tsp Kosher salt

3 Tbsp unsalted butter
-
¼ tsp ground black pepper
-
1/3 cup Supremo® Brand or Chihuahua® Brand Mexican Sour Cream from V&V SUPREMO®

1 cup Shredded Mexican 3 cheese blend from V&V SUPREMO

2 Tbsp parsley, finely chopped, + extra for garnish (optional)

1In a 3-quart saucepan place potatoes, cauliflower, garlic, add enough water to cover potatoes, add salt. Bring to a boil over high heat, reduce heat to medium-low cover the saucepan and cook for 12 minutes or until potatoes are tender.

2Drain potatoes and cauliflower, return to saucepan. Add butter, black pepper, sour cream and mash to desired consistency. Mix in the cheese and parsley. Serve and enjoy!
