¼ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®

2 Tbsp. fresh parsley, chopped

½ tsp. garlic powder

7-8 whole chicken wings (1.8-2 lb.) (separated into flats and drumettes, discard wing tips)

1 Tbsp. grapeseed oil
-
1 Tbsp. chopped garlic
-
¼ cup + 2 Tbsp. fresh lemon juice (separated)

1 tsp. kosher salt
-
1 tsp. ground black pepper
-
1½ Tbsp. fresh rosemary, finely chopped
-
1½ Tbsp. fresh thyme, finely chopped
-
1½ Tbsp. fresh oregano, finely chopped

1½ tsp. baking powder
Wing Dipping Sauce

1Preheat oven to 325°F.

2Dipping Sauce: In a small bowl, combine sour cream, scallion, kosher salt, black pepper, lemon juice, Cotija cheese, and dill. Mix until well combined. Refrigerate until ready to serve.

3In a medium bowl, combine Cotija cheese, parsley, and garlic powder. Mix well and set aside.

4Place wings in a medium bowl along with grapeseed oil, garlic, ¼ cup lemon juice, kosher salt, black pepper, rosemary, thyme, oregano, and baking powder. Mix thoroughly until wings are well coated.

5Place wings (spaced-out evenly) on a rack atop a sheet tray and place in the oven for 20 minutes. Raise oven temperature to 425°F and continue to cook wings for 10 min. Remove from oven and, using a brush, evenly coat the wings with 2 Tbsp. of fresh lemon juice. Let cool for 1 minute.

6Toss wings into Cotija, parsley, and garlic powder coating. Serve warm with wing dipping sauce and enjoy!!!
