Our Mexican Corn Salad packs all of the flavor of street-vendor elotes into a cool and refreshing summer side salad! Sweet corn, Chihuahua® Cheese, and Supremo® Brand Mexican Sour Cream from V&V SUPREMO® make this salad irresistible.
Ingredients

1 tsp. vegetable oil

2 cups sweet corn, frozen

½ Tbsp. lime juice

½ tsp. cayenne pepper, heaping

¼ tsp. hot Mexican-style chili powder

¼ tsp. Kosher salt, heaping

¼ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
-
⅔ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO

1 cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®

1 tsp. fresh cilantro, chopped

Chili-lime salt (optional)

Tortilla chips (optional)
3 Steps to complete

1Preheat a cast-iron skillet for 1 minute over high heat; heat oil for 1 additional minute. Add corn and cook 6 to 8 minutes, stirring occasionally, or until lightly charred. Remove from heat and allow corn to cool for 3 to 5 minutes.

2In a large bowl. Combine corn, lime juice, cayenne pepper, chili powder, salt, Cotija cheese. Stir to combine. Fold in Sour Cream and Chihuahua® Cheese until all ingredients are fully incorporated. Garnish with cilantro and chili-lime salt to taste.

3Serve Mexican Corn Salad with tortilla chips and enjoy!
