Every family has its own recipe for Mexican rice and ours is no different! We use tomato, onion, and fresh cilantro to make a side dish that’s perfect for tacos, enchiladas, and more!
Ingredients
- 2 Tbsp. vegetable oil
- 3 Tbsp. white onion, small dice
- 1 clove garlic, minced
- 1 cup long grain rice
- ¼ cup canned tomato sauce
- 1¾ cups unsalted chicken stock
- ½ tsp. kosher salt
- one small bunch fresh cilantro

- 1Preheat oil in a medium pot for 2 minutes over medium high heat. Add onion and cook for 1 minute. Mix in garlic and cook for 30 seconds. Add rice and sauté for 2 to 3 minutes or until rice is lightly browned. Mix in tomato sauce, chicken stock and salt. Bring to a boil, reduce heat to low, add cilantro, cover, and simmer for 18 to 20 minutes. Remove from heat and let rice rest for an additional 5 minutes, covered. Discard cilantro if desired.
