Mumbai Chicken Salad is a simple and fast way to enjoy the exotic flavors of Indian cuisine. Creamy curried chutney dressing pairs with rotisserie chicken and Cotija cheese to make a craveable deli-style salad that is perfect any day of the week.

Dressing
- 1 cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
- 1 tsp. curry powder
- ⅓ cup mango chutney
- 1 tsp. fresh lime juice
- 2 cups rotisserie chicken, shredded
- 1 Tbsp. chives, chopped
- ⅓ cup yellow raisins
- ¼ cup sliced almonds, toasted
- 1 small head green leaf lettuce, chopped, divided
- ⅓ cup sweetened shredded coconut, toasted
- ⅛ tsp. ground black pepper
- ½ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
- 8 thin slices honeydew melon
- 8 thin slices cantaloupe
- 12 thin slices seedless cucumber
- 1 Roma tomato, ¼ wedge cut
5 Steps to complete
- 1In a medium bowl; combine sour cream, curry, chutney, and lime juice. Stir until thoroughly combined. Refrigerate until needed.
- 2In large bowl, mix ¾ cup dressing with chicken, chives, and raisins. Cover and refrigerate chicken mixture and remaining dressing until needed.
- 3Just prior to serving; add almonds, coconut, black pepper, and Cotija cheese to chicken mixture. Mix until all ingredients are fully incorporated.
- 4Arrange 2 slices of honeydew and cantaloupe on 4 salad plates, top with 1 portion chopped lettuce in the center of the plate. Top lettuce with 1 tomato wedge, 3 cucumber slices, and ½ cup chicken salad.
- 5Serve Mumbai Chicken Salad with remaining dressing on the side, and enjoy!
