Ingredients

1 Tbsp. extra virgin olive oil

1 Tbsp. unsalted butter

1/4 cup onion, diced

2 large cloves garlic, minced
-
1/2 serrano pepper, minced

1/2 lb. white mushrooms, stems removed, sliced

1/8 tsp. salt
-
1/8 tsp. fresh ground black pepper

2 Tbsp. chopped epazote
-
4 flour tortillas
-
1 cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
-
Salsa of your choice (optional)

1Preheat a large skillet over medium heat for one minute. Add olive oil, butter. When melted, add onions and sauté for 1 minute. Add garlic and Serrano pepper. Cook for 1 more minute. Mix in mushroom, add salt, black pepper and continue to cook 4-5 minutes. Remove from heat, mix in epazote. Divide into 4 portions. Set aside.

2Preheat a nonstick griddle for 2 minutes over medium-low heat. It’s important that the skillet temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts. Warm tortilla for 15 seconds. Flip tortilla and add ¼ cup Chihuahua® Cheese. Add 1 portion mushroom mixture. Fold tortilla in half. Cook quesadilla for 2 to 3 minutes or until cheese is melted and the tortilla is golden brown. Flip quesadilla as needed while cooking to avoid burning. Repeat for remaining ingredients. Serve with your favorite salsa and enjoy!
