- medium sized zucchini, sliced about ¼- inch thick rounds 1
- ¼ cup all-purpose flour
- 2 large eggs
- 1/8 tsp ground black pepper
- 1/8 tsp salt
- 3/4 cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
- ¼ cup plain breadcrumbs

- 1Preheat oven to 400°F degrees. Coat a baking sheet with cooking spray. Set aside.
- 2Place flour on a plate.
- 3In a bowl, beat eggs, season with salt, and pepper.
- 4On a separate plate, combine panko and Cotija cheese.
- 5Working in batches, coat zucchini rounds in flour, dip into eggs, then toss in the cheese and panko mixture, pressing to coat.
- 6Place zucchini slices on the baking sheet. Repeat until all are done.
- 7Bake for 15 minutes, or until golden and crispy.
- 8Meanwhile, make the dipping sauce by mixing in a bowl, sour cream, scallion’s cilantro, lime juice, red pepper flakes, add salt and pepper. Set aside.
- 9Remove zucchini rounds from the oven, allow them to cool slightly (about 5 minutes) serve warm or at room temperature with the dipping sauce. Enjoy!
