    Preheat oven to 400°F.

    Preheat a skillet over medium heat for 1 minute. Add chorizo, and cook for 10 to 12 minutes, breaking up the meat with a spoon.

    Add onions and sauté for 3 more minutes.

    Add tomato sauce and raisins. Cook for 3 more minutes. Remove from heat and set aside.

    Cut ends off plantains and peel.

    Cut plantains in half widthwise; cut both pieces in half lengthwise. Scoop out a little of the plantain flesh with a small metal spoon.

    Place skillet over medium heat. Pour in oil to a level of ½ inch. Wait for the oil to shimmer or till it reaches 350-375°F, approximately 4 to 5 minutes. (Be cautious when frying.)

    Fry plantains in oil just until golden brown, turning with tongs when necessary. Place plantains on paper towels to drain. Repeat the process with the rest of the plantains.

    Place plantains on a sheet tray cut side up. Top plantains with chorizo mixture, and cheese. Bake for 12-15 minutes, or until cheese is fully melted. Serve plantains, and drizzle sour cream. Enjoy!
