If you like plantains, you have to try this recipe! We are sure you’ll love ripe plantains with chorizo and cheese!
Ingredients
- 1 (14 oz.) pkg. Supremo® Brand Pork from V&V SUPREMO®
- 1½ cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
- 15 oz. Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
- 1 cup onion, diced
- ½ cup raisins
- ½ cup tomato sauce
- 3 large ripe plantains
- vegetable oil for frying
9 Steps to complete
- 1Preheat oven to 400°F.
- 2Preheat a skillet over medium heat for 1 minute. Add chorizo, and cook for 10 to 12 minutes, breaking up the meat with a spoon.
- 3Add onions and sauté for 3 more minutes.
- 4Add tomato sauce and raisins. Cook for 3 more minutes. Remove from heat and set aside.
- 5Cut ends off plantains and peel.
- 6Cut plantains in half widthwise; cut both pieces in half lengthwise. Scoop out a little of the plantain flesh with a small metal spoon.
- 7Place skillet over medium heat. Pour in oil to a level of ½ inch. Wait for the oil to shimmer or till it reaches 350-375°F, approximately 4 to 5 minutes. (Be cautious when frying.)
- 8Fry plantains in oil just until golden brown, turning with tongs when necessary. Place plantains on paper towels to drain. Repeat the process with the rest of the plantains.
- 9Place plantains on a sheet tray cut side up. Top plantains with chorizo mixture, and cheese. Bake for 12-15 minutes, or until cheese is fully melted. Serve plantains, and drizzle sour cream. Enjoy!
