Here is an easy way to experience a sweet and savory combination. Plantain Chorizo Quesadillas are a new take on traditional quesadillas. Delicious!

    Preheat a medium skillet over medium heat for 1 minute. Add chorizo. Break it apart and cook for 9 minutes, stirring occasionally.

    In the meantime, thaw plantains in the microwave then slice them in half, lengthwise.

    Preheat a skillet or griddle for one minute.

    Heat the slices for 5 minutes, just enough time so they develop a caramelized crust and become a little bit firmer.

    Remove the plantains from the griddle, cut into small pieces and add into to the cooked chorizo.

    Mix in Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®.

    Lower the griddle temperature to medium-low heat. It is important that the griddle temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts. Heat tortillas for 30 seconds on one side, flip tortillas. Add to each ¼ cup Shredded Chihuahua® Cheese and 2 Tbsp. of the chorizo and plantain mixture.

    Fold tortillas in half and cook until cheese melts and the quesadillas are golden brown on both sides, flipping when necessary. Repeat with remaining tortillas. Serve quesadillas with Supremo® Brand Mexican Sour Cream from V&V SUPREMO® Enjoy!
