Mashed potatoes will never be boring again! This Potato Casserole with Chorizo and Beef dish is loaded with flavor with the combination of chorizo and ground beef!
Ingredients

1⅓ cups water
-
2 Tbsp unsalted butter
-
½ + ¼ tsp Kosher salt (divided)

⅔ cup Supremo® Brand or Chihuahua® Brand Mexican Sour Cream from V&V SUPREMO®

1 ⅓ cups instant potatoes
-
1- link (14 oz) Supremo® Brand Pork Chorizo from V&V SUPREMO®

3 Tbsp white onion, chopped
-
1 garlic clove, chopped
-
½ lb lean ground beef
-
⅛ tsp ground black pepper
-
1 Tbsp tomato paste
-
2 Tbsp green bell pepper, diced
-
2 Tbsp red bell pepper, diced
-
½ cup canned corn
-
1 (7.6 oz.) pkg. Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
4 Steps to complete

1Preheat oven to 375°F. Spray 8-inch baking dish with cooking spray. Set aside.

2For mashed potatoes: In a medium pot, combine water, butter, ½ tsp. salt, heat to boil, remove from heat. Stir in sour cream, and potatoes and let stand until moist. Set aside.

3Preheat a medium skillet over medium heat for 1 minute. Cook chorizo for 10 minutes. Remove from the skillet and set aside. In the same skillet, add onion, sauté for 30 seconds, mix in garlic and sauté for 30 seconds more. Add ground beef, season with salt and pepper. Break meat up while cooking and cook for 5 minutes stirring frequently. Mix in tomato paste, add chorizo back to the skillet, add in green & red peppers, corn; continue to cook for 1 minute.

4Spread 1½ cups of mashed potatoes into the baking dish. Add meat mixture and distribute over the potatoes and carefully spread the rest of the mashed potatoes over the meat. Top potatoes with Chihuahua® cheese. Place in the oven and bake for 15 minutes. Remove from the oven and let cool for 5 minutes. Serve and enjoy!
