The term “refried” is somewhat of a misnomer, since in Spanish “refrito” is closer to “well-fried”. At any rate this is a classic side dish and fundamental for making tacos, tostadas, sopes, tortas, etc.
Ingredients
one batch:
-
one batch “Slow-Cooked Beans” (See recipe)
-
1 small onion, diced
-
2 cloves garlic, peeled, minced
-
½ jalapeño chile, cut lengthwise
-
1 Tbsp. vegetable oil
-
to taste salt
-
8.8 oz. Pkg. V&V SUPREMO® Brand Queso Fresco Cheese, crumbled
2 Steps to complete
-
1Place a medium thick-bottomed pan (preferably) over medium heat for 1 minute. Add oil. Add jalapeño and onions. Cook, stirring until lightly brown about 3 minutes. Add garlic-cook for 1 minute. Remove jalapeño (if desired).
-
2Add beans and mash with a potato masher to a coarse puree. Add enough bean broth to make them a bit soupy, since they will thicken. Add salt to taste.
