Everything tastes great in a quesadilla! Try this recipe for a different twist on the classic corned beef sandwich.
Ingredients

¼ cup sauerkraut (well packed)

caraway seeds
-
½ lb. sliced corned beef

2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®

8 flour tortillas (6 inch)

16 dill pickles round slices (optional)

1In a bowl, mix sauerkraut with caraway seeds. Set aside.

2Preheat a skillet or griddle for 1 minute over medium-low heat. It’s important that the skillet temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts.

3Heat tortillas for 30 seconds. Flip tortillas and spread 1 tsp. of dressing, evenly over tortilla. Add ¼ cup Shredded Chihuahua® Cheese. Shred 2 slices of corned beef and place on top of the cheese. Add 1 Tbsp. sauerkraut and distribute evenly.

4Fold the tortillas and cook until golden brown on both sides, and cheese fully melts. Flipping occasionally so they don’t burn. Repeat with remaining tortillas.

5Serve quesadillas with remaining Russian dressing made with SUPREMO® Brand Mexican Sour Cream from V&V SUPREMO® on the side. Enjoy!
