    Preheat a medium skillet over medium heat for 1 minute. Remove the plastic casing from the chorizo and cook for 5 minutes. Break up chorizo while cooking.

    Add onion and sauté for 3 minutes. Stir in tomatoes and cook for 2 minutes more. Set aside.

    Preheat a medium saucepan over medium heat for one minute. Add oil, and heat for 1 minute. Add the rice and sauté, for 4 minutes, stirring frequently until lightly toasted. Stir in chicken broth. Add a pinch of salt. Add the chorizo mixture. Bring to boil. Place cilantro just on top of the rice. Do not stir. Cover the pot. Reduce heat to low. Simmer for 20 minutes.

    Before serving, remove cilantro. Serve with Sour Cream. Enjoy!
