Ingredients

1 10x10 thin pizza crust pre-made

2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
-
1 Tbsp. extra virgin olive oil

1 roma tomato cut into 6 thin, round slices
-
4 large basil leaves julienned
-
½ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
To roast garlic:

1For garlic: Preheat oven to 400°.

2Slice the top of the garlic heads off. Place each head of garlic on aluminum foil. Drizzle 1 tsp. of olive oil over the exposed surface of the garlic, letting the oil sink down into cloves. Add a pinch of salt and black pepper. Take up ends of the foil to form a package around the garlic and roast for 1 hour.

3Remove garlic from the oven, carefully open and let cool for about 15 minutes.

4Over a plate squeeze garlic out by pressing forward with your fingers. Mash with a fork until it becomes a paste. Set aside.

5For pizza: Preheat oven according to pizza crust package instructions.

6Spread the roasted garlic on pizza crust, leaving about ½ inch of space on the edges. Brush ½ Tbsp. of olive oil on the edges, this will result in a crispy crust. Add Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO® distribute evenly, leaving a ½ inch border clear from the edge

7Add tomato slices on top of cheese.

8Place the pizza on a sheet tray and place in the oven. Cook according to pizza crust package instructions. (Cheese should be fully melted.)

9Remove pizza from the oven, top with Grated Sierra® Brand Cotija Cheese and basil. Add olive oil over pizza. Cut pizza into 6 slices. Serve and add more Grated Sierra® Brand Cotija Cheese. Delicious. Molto buono!
