1 stick (4 oz.) unsalted butter, room temperature

1 oz. unsalted butter, cold

1 cup sugar
-
3 large eggs, separated

1 cup all purpose flour

1 tsp baking powder
-
1 cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

1 cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
-
½ cup V&V SUPREMO® Brand Queso Fresco Cheese, crumbled

¼ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
-
¼ cup sesame seeds

1Preheat oven to 350°F.

2Butter 8" x 8" glass baking dish with the cold butter.

3Sift flour and baking powder in a bowl.

4Place soft butter in mixing bowl, using the flat paddle, beat until creamy, about 2 minutes. Add sugar and beat for 2 more minutes.

5Add egg yolks one at a time and beat for 2 minutes until well incorporated.

6Turn mixer to low speed. Add 1/3 part of the sifted flour and baking powder. Keep on mixing add 1/3 part of the sour cream. Continue this process, finishing with the sour cream. Mix for one minute. Turn mixer off and push batter down with rubber spatula. Mix another minute.

7Add all cheeses. Mix for 2 minutes.

8Transfer batter to another bowl. Clean and dry mixer bowl. Make sure that all equipment is clean and dry. Ensure that any residual yolk is removed completely before continuing.

9Place egg whites in mixer bowl. Use whisk attachment to beat egg whites until they form stiff peaks.

10Fold egg whites into batter with spatula 1/3 at a time.

11Pour batter into the baking dish. Sprinkle sesame seeds on top. Bake for 60 minutes.

12Let cool, serve and enjoy!
