1Cook pasta according to package instructions and drain well.

2Season shrimp with lemon juice, 1 Tbsp salt, and ½ tsp black pepper. Set aside.

3Melt 2 Tbsp butter in a medium saucepan over medium high heat. Add shallots and garlic and sauté, stirring frequently, for about 2 minutes. Add shrimp and sauté for 2 minutes, remove the shrimp from the pan and set aside. In the same pan, add oil, melt remaining butter, and then add wine, 1 tsp. salt, ¼ tsp. black pepper, and sugar. Bring to a boil. Once boiling, stir in sour cream and allow the sauce to thicken. Stir in chopped parsley, pasta, ¼ cup Cotija cheese, and add shrimp back into pan. Serve and garnish each serving with reserved Cotija cheese and more chopped parsley. Enjoy!
