Shrimp and Quesadillas are a great combination, and the addition of tangy, fresh pico de gallo and sour cream creates a balance of flavors for these easy-to-make quesadillas.

    Pico de gallo: Combine all ingredients in bowl, add salt to taste and mix well.

    Cut each shrimp into 4 pieces, place in bowl, mix with lime juice and a dash of salt and pepper.

    Place skillet over medium heat for 2 minutes. Add oil. Add shrimp and cook for about 2 minutes, stirring frequently. Remove from heat.

    Place a large skillet or griddle over medium heat for 1 minute. Warm the tortillas for 30 seconds. Flip tortilla and top with ¼ cup of Chihuahua cheese, fold tortilla in half. Turn quesadillas for even browning. Remove the shrimp from the skillet. Once the cheese has melted, remove quesadilla from skillet and add ¼ of the shrimp and pico de gallo. Repeat process with the rest of the tortillas. Enjoy!
