Meat Sauce

1 link from (14 oz.) Pkg. Supremo® Brand Pork or Beef Chorizo from V&V SUPREMO®

¼ cup white onion, finely diced
-
1 Tbsp. garlic, minced
-
½ lb. ground beef
-
½ tsp. kosher salt
-
¼ tsp. ground black pepper
-
¼ cup tomato paste
-
1 (14 oz.) can petite diced tomatoes
-
1 cup water
-
½ tsp. dried Italian seasoning
-
3 Tbsp. + 1 Tbsp. fresh parsley, chopped (separated)

½ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO® (divided)

1Preheat a large sauté pan over medium heat for 1 minute.

2Add chorizo (break chorizo apart while cooking), onions, and garlic and cook for 5 minutes.

3Add ground beef, season with salt and pepper, and cook for 10 minutes.

4Stir in tomato paste, diced tomatoes, water, Italian seasoning, and bring to boil. Cover and reduce heat to low and simmer for 15 minutes, stirring occasionally. Mix in 3 Tbsp. parsley.

5Bring a large pot of salted water to a boil. Boil the spaghetti until al dente (about 9 minutes). Drain, return spaghetti back to the pot, add butter, sour cream, ¼ cup Cotija cheese, and mix gently.

6Serve meat sauce over pasta. Sprinkle each serving with remaining Cotija cheese and parsley. Enjoy!
