An easy-to-make salad when you’re craving a fresh meal. Try this mix of fresh greens and seared Cotija cheese, tossed with a raspberry dressing. A combination that’s sure to please your taste buds.
Ingredients

2 (6 oz.) pkg fresh raspberries, reserve 1 pkg. for salad

2 Tbsp granulated sugar

1/3 cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

1 (4. 5 oz.) Wedge Sierra® Brand Cotija Cheese from V&V SUPREMO®

1 (5 oz.) pkg mixed green lettuce

1 cup yellow grape tomatoes, cut in half

2 Tbsp almonds, toasted

1For the dressing: Place the berries in a saucepan; pour the sugar onto the berries. Mash. Bring to a boil over medium heat and cook for 4 minutes, stirring continuously. Push berries through a fine mesh strainer into a small bowl. Whisk in the sour cream and set aside or place in the fridge until using.

2For the cheese: Preheat a nonstick skillet or a griddle over medium heat for 2 minutes. Cut the Cotija wedge in half lengthwise, place the two halves in the skillet and sear each side for 30 seconds. When done, cut each slice lengthwise, then into small cubes.

3For the salad: In a large bowl, combine the spring mix lettuce with raspberries, tomatoes, toasted almonds, and Sierra® Cotija Cheese. Pour the dressing over the salad, toss gently, serve and enjoy!
