Ingredients

1 (10 oz.) pkg. V&V SUPREMO® Brand Queso Fresco Cheese, crumbled

¾ cup white onion, small dice

1½ cups Red Enchilada Sauce...See recipe or use your favorite brand, warmed

¼ cup vegetable oil
-
10 (6-inch) corn tortillas, warmed

1 (7.06 oz.) pkg. Shredded Mexican 3 Cheese Blend from V&V SUPREMO®

1 cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
4 Steps to complete

1In a bowl; combine Queso Fresco and onion. Mix until well combined and set aside until needed.

2Spread ⅓ cup enchilada sauce across the bottom of a 12-inch x 8½-inch dish or microwave safe casserole. Set prepared dish aside until needed.

3Preheat 1 tablespoon oil in a skillet for 2 minutes over medium high heat. Dip tortillas, one at a time, in the Enchilada Sauce. Lightly fry tortillas for 10 to 15 seconds on each side or until they have softened slightly to make the enchiladas easier to roll later on. Repeat this process for the remaining tortillas, adding the remaining oil to the pan as needed.

4Fill each tortilla with ¼ cup Queso Fresco onion mixture and roll up. Arrange stuffed enchiladas seam side down in the prepared dish, cover with remaining Enchilada Sauce, and evenly top with Mexican 3 Cheese Blend. Microwave on high power for 4 to 5 minutes or until cheese is melted. Serve and enjoy!
