Our Tequila Chicken Quesadilla capture the flavor of Summer time! Melted Chihuahua® Cheese and tequila marinated grilled chicken are delicious partners in this easy authentic quesadilla.

    In a bowl; combine Pico de Gallo ingredients, mix thoroughly, and set aside until needed.

    In bowl; combine chicken, oil, orange juice, lime juice, tequila, garlic powder, onion powder, salt and pepper. Mix until chicken is well coated. Marinate chicken for 15 minutes

    Preheat a grill pan or skillet for 2 minutes over medium-high heat. Grill chicken for 6 to 8 minutes on each side or until chicken reaches an internal temperature of 165°F. Allow chicken to rest for 1 to 2 minutes and dice into bite-sized chunks. Cover and keep warm until needed.

    On a clean work surface; lay out tortilla, add half portion of Chihuahua® Cheese. Add grilled chicken, top chicken with the rest of the Chihuahua® Cheese and fold in half.

    Preheat grill pan or griddle for 2 minutes over medium heat. Cook quesadilla for 5 to 6 minutes on each side or until the cheese has melted. Flip as needed during cooking to prevent burning.

    Slice Tequila Chicken Quesadilla in to quarters. Place shredded lettuce on a serving platter. Top with pico de gallo, avocado slices, and Sour Cream. Arrange quesadilla slices around salad, serve, and enjoy!
