    Preheat oil in a cast iron skillet for 2 minutes over medium heat. Add onion and sauté for 1 minute. Add poblano pepper, bell pepper, chayote. Cook for 3 to 4 minutes. Add calabacita and continue to cook for 2 to 3 minutes. Mix in corn, garlic powder, salt, pepper, and oregano. Cook for an additional 1 to 2 minutes. Turn off heat and mix in lime juice. Divide vegetable mixture into 6 equal portions and keep warm until needed.

    Preheat a nonstick griddle or comal for 2 minutes over medium heat. Warm tortillas for 1 minute on each side. Top with ¼ cup Chihuahua® Cheese and allow cheese to melt for 30 seconds to 1 minute.
