4 oz. angel hair pasta

4 oz. vegetable oil

6 ripe plum tomatoes, chopped, or 1 ½ cups canned tomatoes with juice

1 small onion, chopped coarsely

2 large cloves garlic, chopped coarsely

½ Tbsp. dried oregano
-
6 cups chicken broth
-
½ cup Enchilado cheese from V&V SUPREMO®, crumbled
-
¾ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

¼ cup chopped cilantro

salt to taste

1In a blender place tomatoes, onion, garlic, oregano, and 2 cups of chicken broth. Blend well. .

2Place a medium saucepan over medium heat for 1 minute. Add oil. After 1 minute, add pasta, stir constantly until golden brown. Drain oil from pasta. Add in the tomato sauce, and add the remaining chicken broth.

3Cook over medium heat, stirring frequently. Add salt to taste. Cook for 15-20 minutes or until pasta is tender.
